So the GMG says this: "Regeneration or fast healing heals some number of hits each round—usually one to one and a half hits. To determine the number of Hit Points it should restore, look at the high damage value on Table 2–10: Strike Damage (page 65) and multiply that value by the number of hits healed. For instance, if the high damage is 20, regeneration between 20 to 30 makes sense."
However, almost no monsters I've come across actually seem to follow this guideline. Trolls seem to, but Regen is their thing, but very little else does. I've been pondering this as I build a fast healing monster, when I made a discovery comparing the playtest Jabberwock to the Bestiary 2 Jabberwock. The playtest version has fast healing 50, and the final version has fast healing 25. 50 lines up with the GMG recommendation, and 25 does not.
I think maybe somewhere between the playtest and the final release, it was decided that fast healing should recover half a strike's damage instead of a whole strike's damage, but this correction didn't make it into the GMG. Seemed worth clarifying if this was the case.
