Class Specific Encounters

Hello there. I am running a 2e mini campaign for friends with the purpose of all of us learning the rules and whatnot. To that end I would like to have sessions and encounters designed to focus on the high points of their classes.

They are a monk, champion, ranger and cleric.

I kind of have something for the champion as there have been and will be undead.

What are some ideas for the other classes? I plan on having a session that focuses on the ranger that involves tracking through the forest.

What sort of build is the Monk going? Something involving lots of benefits from mobility could be good for them. Perhaps something like a rapids river battle where he could jump from floating log to log.
