That list doesn't seem complete.
Arazni (not sure if she still has divine power)

Hanspur as well. Was ritually drowned as a sacrifice to Corosbel, Gozreh intervened and preserved part of Hanspur's soul in his dire rat companion. After a week, Hanspur rose from the Sellen River as a demigod with a fractured soul. It is unknown if Gozreh intended to raise him as a divine being or as a mere guardian of the waterways.

I had thought Pharasma was like... old old deity from back in the day. I need to brush up on my Golarion lore again.
She's the first sentient thing in this reality, because she came from the previous reality and survived its unmaking, basically.
She might have survived more than one unmakings, there's no reliable historical record on "previous realities".

If yes, we can add Lamashtu, Sarenrae and maybe Asmodeus to the list.
I don't think we can add Asmodeus. He and his brother are spelled out in the Book of the Damned (for what the Book of the Damned's word is worth) as being around pretty much before anything aside from Pherasma and the Monad.

Thanks everyone! There are a LOT more than I thought! So rather than pick up Lore in each of those deities, as I originally planned, I've opted to instead take "Ascension Lore" for my new character.

I was thinking of mortals from the material plane when I asked the question, but I suppose any form of deific ascension would be of interest to the Heart Collector.

This is basically true of most of the "outsider type" primary gods. They most likely started as bundles of aligned essence that accreted into divinities at the beginning of time.

Most notably missing are the Archons and the Demons. The demons didn't exist at the beginning of time, so their deity, Lamashtu, worked her way up through the hierarchy and stole divinity. On the LG side, we have Apsu, Torag, and Erastil of the non ascended dieties, but none of them really screams "archon." Abadar is also kinda weak, as we don't know enough about his early history to say one way or another.

Erastil has a specific kind of Archon that is modeled after him. I'd say him being an ascended Archon is a reasonable possibility. That said, Desna is very much not an Azata, nor is Pharasma exactly a Psychopomp (she created them, but predates all these categories).
Expecting this kind of symmetry from the core 20 is probably a bad idea, though. They're only the core 20 Gods because they're the 20 most popular in a specific region, not because they have some cosmic significance beyond other Gods (a few, like Pharasma, do but not all by any means).

All of the daemons began as mortal souls, and exist in their current state either directly descended from one mortal soul or more rarely an amalgamation.
I would specifically call out the Oinodaemon, Trelmarixian, and Szuriel as having been noted in print as starting as a single mortal soul or having a prior mortal life called out.
