So, I love the idea of playing a Wild Shaping Druid but Animal Form seems very lackluster until level 7. Armor Class in particular at lower levels is laughably low, practically making the Druid an auto-hit for bad guys. Is there any way to raise that AC through feats or multiclassing? I couldn't find anything.

The spells get you to basic martial level.
That is a martial w/o Hunter's Edge, Rage, Sneak Attack, etc.
Other than lacking a shield, those ACs are pretty standard.
As well as full casting (!), you have the option to dump Str & Dex and still fight in melee. That means your Con can be top-notch.
If you want Wild Shape to be your shtick, then you could/should MCD over to another class to pick up more offense and perhaps Resiliency, as well as combat tricks that suit your favorite forms.
As for AC, unless you can get a temporary magic buff I don't think anything normal stacks. You could pick up Rogue MCD for Nimble Dodge, though I don't think that's the best class to go to.
Barb would give Rage for h.p. & damage, though it makes your AC even worse. :)
Or if it's only the animal-warrior flavor you want, Animal Instinct Barbarian does much better.

A Druid who keeps their Wild Shape using max level spells is right in the same range as Ranger AC. Occasionally one point lower depending on level. That's fine AC for a frontliner. Rogues are about the same as Rangers, Barbarians are mostly worse (Animal Instinct Barbarians can be as good as Fighters), and Fighters are only a point better.
