can you an extraordinary, spell-like, or supernatural ability to make an attack of opportunity?
the core rule book reads that "an attack of opportunity is a single melee attack", and some
of the granted powers of clerical domains read "melee touch attacks"[artificers tOUCH (SP) P41]

ATTACK OF OPPORTUNITY [reaction]Trigger A creature within your reach uses a manipulate action or a move action, makes a ranged attack, or leaves a square during a move action it’s using.
You lash out at a foe that leaves an opening. Make a melee Strike against the triggering creature. If your attack is a critical hit and the trigger was a manipulate action, you disrupt that action. This Strike doesn’t count toward your multiple attack penalty, and your multiple attack penalty doesn’t apply to this Strike.
So it looks like the answer is that anything you can do with the Strike action is an option.
STRIKE [one-action]ATTACK
You attack with a weapon you’re wielding or with an unarmed attack, targeting one creature within your reach (for a melee attack) or within range (for a ranged attack). Roll the attack roll for the weapon or unarmed attack you are using, and compare the result to the target creature’s AC to determine the effect. See Attack Rolls on page 446 and Damage on page 450 for details on calculating your attack and damage rolls.Critical Success As success, but you deal double damage (page 451).Success You deal damage according to the weapon or unarmed attack, including any modifiers, bonuses, and penalties you have to damage.
So, since the AoO reaction allows you to make a strike action, and the strike action allows a weapon attack or an unarmed attack, AoOs can be made with a weapon attack or an unarmed attack. Any ability that gives you an attack you can strike with expands this list. An ability that gives you a new action that contains a strike would not.
A dragon sorcerer who has already used their focus spell to grow claws could use those claws as an AoO, if they have the ability to make AoOs. But they could not cast shocking grasp, which is a melee spell attack, because it is not a strike.
