On page 240 for the Subsist action, it describes that on a critical success you "either provide a subsistence living for yourself and one additional creature, or you improve your own food and shelter, granting yourself a comfortable living."
Are there any actual mechanical differences for a character that is granted a comfortable living versus a subsistence living? I haven't been able to find anything in the CRB about it and as far as I can tell just exists as pure fluff.

I think it's mostly fluff - and a question of pride. I would not be proud to simply gain a "subsistence living", one where you are usually hungry and dirty.
Don't forget Monty Python:
Peasant one: "How can you tell he's a king?"
Peasant two: "Because he hasn't got sh1t all over him."
At the very least, a PC getting by with a subsistence living should have negative circumstance penalties when making skill checks in most social encounters. Unless he's trying to interact with other poor folk, in which case it might even be a bonus. But AFAIK the CRB doesn't specify such an effect.
