A) Pick a boon type and draw a random Lev. 1 card from that stack?

or

B) Just outright pick any Lev. 1 boon you want?

I believe it's stated somewhere in the rulebook, but "new X" means "draw a random X from the vault", so it's A.

I don't have the game yet (has to travel to France) but I really hope you don't get to chose your card else you get your perfect game really fast and following scenarios of the same level lose some interest. IMHO.

Yewstance is indeed correct. Rulebook references are as follows:

CRB p14: Summoning Cards and New Cards wrote:
Sometimes you will be told to summon a card or to do something with a new card. When this happens, retrieve the card from the vault.
CRB p8: Dealing With Cards wrote:
When you draw a card from the vault, unless you are told to draw a specific card, draw a random card of the appropriate type by shuffling the cards you're drawing from and drawing the top card.
