OK so this isn't really so much a new idea as just a new way for us to buy stuff you've already got. I think it would be great if after all of the APs are released a boxed set of them along with all the maps and stuff that usually come out later would be a great buy. You could maybe even package them as special editions with extra stuff to go with them. I'm thinking a normal boxed set would include something like the following:
All of the adventure path books in the set
The associated maps
A dvd of all the associated digital media + paizo catalogue
Any additional products that came out to go with the AP
What do you think?

The problem is, boxed sets are VERY expensive to produce and they were one of the factors behind TSR's death. Paizo higher-ups did the math on boxed sets and they aren't currently profitable enough for them to even try one. However, with Pathfinder Basic on the horizon, things might change in this department.

I think anything that is announced -- other than as a one-time only special -- and that messes with the Adventure Path format and creates a incentive to unsubscribe (or not to subscribe at all) is a business decision that will NOT happen.
We have seen one time only bundles on Black Friday. We maight see something very cool next year on the 5th year Pathfinder/ 10 yr Paizo anniversary.
But beyond that? I think messing with a product concept that has resulted in a product line that is not only paid for -- but is in fact, profitable -- before it ever ships, is recklessly mucking about with the fundamentals of the company without knowing what will happen.
Could it work? Sure. Is the risk too high?
I think that the answer to that question is "yes."

What Steel_Wind said.
Subscriptions keep our doors open. They're a predictable burst of cash, and ensure that we can pay our bills each and every month.
Anything that would make subscribers think they should cancel their subscriptions and buy our stuff later (because it would be better/cheaper/more convenient) is therefore not in the cards.

They have done 'boxed' sets. They called them super bundles and sold them for 2-3 days around Black Friday. Great deals on APs plus some surrounding product (Map Packs and a few other items I recall).
This was the second year in a row they did AP bundles for dirt cheap. You can't really predict which ones they are going to bundle though. They also don't come in fancy slip covers for the set...
Also, don't expect Paizo to sell any digital content that doesn't go through their watermark system. So any bundles would be have to be sold through the website and digital content would be delivered electronically.

Well for me I'd never unsubscribe for that reason. I love the AP subscription! It's monthly reading for me and I look forward to it every month.
That being said if most subscribed people are like me then chances are a box set won't do all that well as we'd keep out subscriptions.

Some of you may also have noted that, though those special bundles did involve a substantial savings, they still didn't provide the value that subscribers got during the original runs.
