Okay so the 4th level spell Sacred Nimbus
Does smite evil damage stack with the 1d6+caster level? because smite evil says If this target is evil, the paladin adds her Cha bonus (if any) to her attack rolls. okay that's for attack. And adds her paladin level to all damage rolls made against the target of her smite. which just applys to damage. so when i get hit with sacred nimbus. i cause damage to the enemy? does smite work with this spell?

As far as I can tell yes you add damage.
So this is a 4th level spell for a Paladin. To cast 4th level spells you have to be Paladin level 13. At character level 13 your spells are being cast at caster level 10.
The way Sacred Nimbus works you don't get an attack roll, so you don't add your CHA (from smite) to the attack in any way (However you do add your CHA as a deflection bonus against the attack made against you). If your smitten enemy (heh) hits you with this spell active then they take:
(Spell Damage) + (Smite Damage)
= (1d6 + Caster Level) + (Paladin Level)
In the case of our 13th level Paladin who just got access to this spell that looks like:
(1d6 + 10) + (13) = 1d6 + 26 damage
As a swift action, the paladin chooses one target within sight to smite. If this target is evil, the paladin adds her Cha bonus (if any) to her attack rolls and adds her paladin level to ALL DAMAGE ROLLS made against the target of her smite.
As a general rule, as long as the damage is coming from you (a spell you cast, your weapons, etc) you add your Smite damage. Smite is amazing.

You almost certainly are not going to get a Paizo staff member to answer.
Smite says: "adds her paladin level to all damage rolls made against the target of her smite."
This is a damage roll, so you add paladin level.
That said, I believe it would only apply a single time per casting based on this FAQ. That might end up being a lot more palatable for your GM in any event.
You might ask your DM for the reasons he thinks it doesn't apply, and ask for some examples of when he thinks it would and wouldn't work and why, getting him to think about it might help your case, but at the end of the day, you are probably going to have to accept his ruling.

When it comes to modifiers that affect weapon damage rolls, or simply “damage rolls” (such as the bonus on damage rolls from Point-Blank Shot, inspire courage, and smite evil), special abilities that deal damage on a successful attack roll, apply them on hit point damage only, and only once per casting or use, rather than once per attack. For instance, if a spell or special ability launched a dozen different ranged attacks simultaneously, only one (of the user’s choice) would receive bonus damage. This doesn’t apply on area effects with the rare potential for extraneous attack rolls, like fireball. However, there is a category of abilities that deserve a special note: Abilities like Arcane Strike that specifically enhance a character’s weapon or weapons themselves never apply to special abilities (with the exception of special abilities like the warlock’s mystic bolts that specifically call out that Arcane Strike applies).
If it doesn't involve an attack roll, you're out of luck, which is why things like fireball don't work. As a second example, see here for a follow-up confirmation from Mark Seifter that smite evil does not work with magic missile.
