Weapons like the Doshko has the unwieldy weapon property which means you cant take Attacks of Opportunity with it or full attack with it. So my question is there really any incentive to use weapons with this property because at higher levels your to hit becomes good enough to use full attacks, and for melee classes like the soldier, not full attacking can really dent your Damage per round. Your thoughts?

First, not all Doshkos are unwieldy, the powered ones for example. However, just regarding unwieldy weapons, they typically do more damage, at lower levels, than the equivalent "wieldy" ones. However, in the long run, you're probably better off melee weapons that don't have the property.
On the other hand, if your style is to be constantly mobile on the battlefield, unwieldy is a property that offers few drawbacks, because you're never standing still anyway.

You're making an assumption that you probably shouldn't.
You assume that at higher levels you can swing (and hit) twice consistently.
The maximum attack bonus in Starfinder is 20+9+1 = 30
+30 is the absolute highest to-hit bonus.
+43 is the highest possible K/EAC.
Using these as an example the highest to hit vs the highest defense only has a 40% chance to hit. A -4 Full attack has only a 20% chance to connect, a -3 a 25% chance, the rare -2 a 30% chance.
Full attacks are hard to use in SF as opposed to PF. They are less likely to hit. Thus... Yeah.
