Greetings!
I am looking to run a couple scenarios at a newer store that we have begun running society games at, and I wanted to get some advice on interesting options.
I will be running games covering the 1-5 level range, and would like there to be a common theme. Something that relatively new players to PFS might enjoy; undead theme, or something with a young dragon. Something memorable. Also, I am not looking to run any of the evergreens and would prefer something that does not require half a dozen maps.
Any options out there?

You could go for an Absalom theme, with Black Waters followed a little later by School of Spirits.
The Blakros Museum is a classic too of course, with Mists of Mwangi and Voice in the Void. Voice is particularly scary (good) at lowest tier. And then there's Echoes of the Overwatched and the Penumbral Accords. (Those two are somewhat weaker offerings but easy to prepare.)
If you want a more "archeological expedition/ancient ruins" theme, take a look at The Beggar's Pearl (okay, that's a huge map) and Citadel of Flame.
Tide of Morning + Tide of Twilight are also thematically connected; this time it's all about those fey forest creatures and crazy civilization-hating druids.
The Night March of Kalkamedes is one of the most-loved 1-5 scenarios because it's a very classic D&D adventure, with a wide range of challenges Monsters, trickery, and terrain obstacles.
All of the scenarios I've listed here are relatively non-metaplot, because I think with new players you should focus on scenarios that make sense on their own.

I've run the evergreens before, and played in them multiple times. I am looking for something new for both myself and the players. I am simply taking suggestions so I can review the scenarios and make a decision on them.
I will look into The Beggars Pearl and Citadel of Flame, as well as the "Tide" series.
Any other suggestions? Anything with a young dragon the group could have a chance at defeating? hehe

Some people made a few different Campaign paths awhile ago. Scroll through and pick out a theme you like based on location, or Venture Captains, season, or what have you.

I can't recommend The Night March of Kalkamedes enough.
A supernatural mystery
A talking sword
Wilderness challenges such as getting across a bog or a big crevasse
Wild animals
Bandits
A dungeon, with a dragon in it (though, undead)
An elevator with a big demon-mouth you walk into
A demon bound in a circle
A damsel in distress
What I like so much about Night March is that the challenges are easy to understand for new players ("how are we going to get over there?") even if they aren't experts in Pathfinder mechanics yet. Fast thinking and creative solutions are what you need here.
