I have a student of stone NPC in one of the campaigns I'm running. The feat build I'm using for him focuses on tripping, with improved and greater trip so when he trips someone, allies can strike. With the vicious stomp feat, he can take an attack of opportunity himself. And with shaitan style his punches deal acid damage whether the actual punch hits or not. Bleeding attack also piles on bleed damage with the unarmed strikes.
Could combo well with the Stalwart Defender prestige class, making the character all about standing still and tanking and tripping.

Ask your GM to house rule an unchained version and it becomes much better. For the Ki Powers I'd suggest losing 6 and 12 instead of high jump/abundant step, and everything else is a part of UMonk. Style Strikes and better Ki Powers will help, though flying kick is off the table.
Either way you want to pick up Barkskin from Qinggong monk to supplement AC. I would probably ignore the shaitan style feats and pick up Mantis Style instead. The 3rd level archetype ability is not too bad (as most monks do not get accuracy bonuses), and mixing in stunning fist against flying opponents (when they fly low) will help you use it more.
The DR and Tremorsense abilities should be used sparingly if ever, as they are expensive to maintain. But light fortification and a bonus to AC v. Critical Confirmation is a very nice defense, and as I mentioned above, a scaling attack/damage boost is a rare treat.
