When multiclassing two Veilweaving classes does essence from both stack or is it tracked separately?
Is the amount of essence you can invest in a veil equal to your character or class level? ... Just looked at that again and it says character so got that one...
How is the number of Veils possible tracked? If I am Vizier 10 / Daevic 10.... how many active Veils can I have?

If you're multiclassing, the essence pools stack. If you're using gestalt, you'd take the larger pool.

Excellent. You take your total character level to determine your capacity based on the table, then add any capacity increasing features from all classes to determine your total capacity (just in case there was any remaining confusion).
How is the number of Veils possible tracked? If I am Vizier 10 / Daevic 10.... how many active Veils can I have?
You add the total number of veils shaped from each class, though do note that this doesn't change the normal restriction of one veil per chakra slot. So a Vizier 10 / Daevic 10 would have a total veils shaped of 8+3 (6 from Vizier, 2 from Daevic, and 3 Passion veils).
