This NPC is listed as having +2 grapple and +2 vs grapple with his CMB and CMD, respectively. Further, his Brain Consumption ability is used while in a grapple.
I don't see where the character would receive the bonuses to grapple and would he risk attacks of opportunity to use his ability in a grapple (stat block doesn't list Improved Grapple as a feat).
Should I add Improved Grapple as a bonus feat? Or am I missing something listed on his current stat block?

Which edition are you using? He has Improved Grapple listed in his Feat section in the Anniversary edition (p. 262.) And that feat is also where the +2 grapple bonuses come from.
