I don't know of any rules for Doppleganger aging, but I wouldn't think it out of the question that they are effectively immortal. Every time they shift, they reset their internal clock. So even one living a long, full life undercover could step into an empty room, and shift back to their "normal" form, and then shift right back. That would de-age them, so to speak. That would make sense to me. Worst case, you can always default to elven age categories.

There's no information on the rules... and a very old doppelganger would be a nice thing to have in a campaign. Someone who managed to survive through ages living many lives... How old they can become before dying of old age?
First rule of GMing... what you want to make happen, make happen. Only worry about questions that PC's actually have a conceivable chance of being able to ask.

If you have Pathfinder for Hero Lab, you can make a doppelganger. Go to the Personal section, and it will allow you to set the age. I believe they have maximum age limits in it.
