Most classes get all craft and profession skills as class skills. All that a class skill means is that if you put at least one rank into the skill, you get a +3 bonus on it.
Craft and profession have, of course, an infinite number of subcategories, and one cannot reasonably put ranks into more than a few at most. If you have craft and profession as class skills for your class, you get the class skill bonus for each one you put ranks in.
Craft can be used untrained as an intelligence check, so you can try to craft a suit of armor or an arrow or a gold necklace even if you haven't trained at doing so. However, profession skills cannot, without some special feat or ability allowing you to.
