Canny Tumble, when they can't use an attack of opportunity?

Does Canny Tumble work if the creature is unable to attack you with an attack of opportunity? Maybe they already used their AoO or a rogue used Distracting Attack. Circling Mongoose would be a use case for this or spring attack.

I don't see why not. You'd still need to make the acrobatics roll regardless of course.

The Concordance

Canny Tumble doesn't care whether your opponent can take an AoO or not, but rather whether or not you provoked for your movement. If you succeed your check, you don't provoke and you gain the bonuses from Canny Tumble.
