the Mage Hunter's dispelling strike says it does 1d6 damage for each effect dispelled, but in pathfinder Dispel Magic affects only one spell, even with a targeted dispel. What was the intended interaction here?

It was a typographic error. It should be 1d6 damage per level of the spell that is dispelled. So if you dispel a 3rd level spell, Strike of Dispelling deals an additional 3d6 points of damage, and if you dispel a 5th level spell it deals an additional 5d6 points of damage.
We're working on errata for the first Path of War book now, so there will be updates made to fix the wording. Thank you for the question!

Ah, that makes more sense. How does this work with the Greater strike of dispelling? It can dispel multiple spells.
So say you dispel a 3rd level spell and a 2nd level spell with the greater strike. Do you deal 10d6 damage?
Strike of Magic Rending's wording should be correct. But to simplify it a bit:
You deal +2d6 damage per individual spell you end, the level of the spell(s) do not come into it. There's also the area effect of Greater Dispel Magic, allowing you to also hit enemies within 10 ft. (per Strike of Magic Rending) with a dispel and deal 2d6 damage to them.
Does that make sense?
