Okay, so first of all I'm talking about a character fully proficient in the katana and able to use it one-handed. So, I take Weapon Finesse and Slashing Grace (Katana).
Now, what happens when I CHOOSE to wield it two-handed? Do I multiply my Dex the same as if it was Str?
But, do I even still get to use Dex, or does the fact that I am wielding it two-handed negate the Slashing Grace feat entirely?

When wielding your chosen weapon one-handed, you can treat it as a one-handed piercing melee weapon for all feats and class abilities that require such a weapon (such as a swashbuckler's or a duelist's precise strike) and you can add your Dexterity modifier instead of your Strength modifier to that weapon's damage. The weapon must be one appropriate for your size. You do not gain this benefit while fighting with two weapons or using flurry of blows, or any time another hand is otherwise occupied.
Using the katana 2 handed is not using it one handed, and inherently means your other hand is occupied. 2 reasons why wielding the katana 2 handed negates Slashing Grace.

Worth mentioning just in case, but you also cannot apply weapon finesse to a katana as it is not a light weapon.
Yeah, the slashing grace thing is more fo a swashbuckler feat, and lets it apply that one swashbuckler ability that gives weapon finesse and applies it to any one handed piercing weapons as well.
So if you aren't using a weapon that is light/naturally finesseable, then you need a swashbuckler dip.

There are currently only 3 weapons in the game you can get two-handed damage with and that also only works when playing a Unchained rogue.
-Estoc
-Elven Branched Spear
-Elven Blade (don´t remember it´s exact name right now).
There are four. Aldori Dueling Sword can be used one or two handed and is finessable.

Okay, yeah thought so.
Although, in the case of the katana, you don't need a swashbuckler dip to use it with Slashing Grace. Still doesn't work two-handed though.
I ended up going with a nagamaki-naginata (using Nodachi stats... cause its more like an nodachi since it has a long-wrapped hilt instead of the more traditional 'polearm' of a true naginata. Nagamaki means 'long-wrapping' Also, Paizo's nodachi photo is a nagamaki-naginata... it's not long enough to be a full nodachi :P) since the character is an angelkin aasimar so that means she gets a Str bonus anyway.
It was all for this.
Made in the 16th century by Master Craftsman Umatada Mjouji.
This naginata has seen battles won and empires fall... for over 600 years.
It's the one thing I love on this godforsaken Earth.
