When you use undead anatomy to polymorph to undead creature, applies this rule too?

By strict rules-as-written, no. If it's not on the list, it's not on the list.

That said, that list predates the undead anatomy spell, so it may be an oversight. I would urge a GM to rule based on the specific undead form taken.
