Elemental Body is a polymorph-typed spell so gear melds into the body when cast.
So even though there are elementals with a humanoid-ish body shape I have no option but to "lose" my gear while changed. So even though there are some elementals that use gear, I effectively have no choice but to lose mine if I'm affected by Elemental Body?

Yes. You could strip out of your armor, cast elemental body, and if you are the same size in your elemental form, you can re-equip it. An armored coat would be best for this type of quick unequipping and reequipping.
The other option would be a the Wild enchantment, but that only works for druids, not the elemental body spell.

But remember- elementals can have hands, and a language, so it is not that bad to stay as one all day (an option for druids, who are the main users of that effect).
So why not get gear made for your elemental body? Or rather, the size your prefer. Then put that on in the morning like everybody else (ok...no.. everyone sleeps in fullplate...still...)
This causes slight loss of versatility (since it takes more effort to go to an animal shape)...but weapons, DR, and a powerful movement type like earth glide all can still make that appealing.

It only melds if the gear can't be used, so make your elemental form humanoid. Otherwise alter self would be painfully horrible, since it's a polymorph spell as well and thus meld's gear.Nope.
When you cast a polymorph spell that changes you into a creature of the animal, dragon, elemental, magical beast, plant, or vermin type, all of your gear melds into your body.
It's not tied to usability, it's just tied to what you turn into.
