We tried out one of the rules in the upcoming Giantslayer AP...
...but for the most part, the rules in Unchained are optional rules, so you won't be likely to see us using them much at all. The exception I put in spoilers above is something of a tentative experiment, but going forward in Hell's Rebels... NPC monks and rogues and barbarians, for example, will be the core versions of those classes. GMs, of course, should feel free to swap out builds as they prefer.
We'll likely be supporting some Unchained options in the Player Companion line now and then as it makes sense. Not 100% sure there, but we'll see.
But in the Adventure Paths, for the most part, you won't see us using those options.
NOTE: As regards PFS... that's as much a campaign as it is an "official Paizo product." There are lots of things we do with PFS that we don't do in the core game—the XP method being a big one, but the ban on item creation being another. The use of Unchained options in PFS is a campaign-specific choice, akin to a house rule or your own GM's decisions on how to run a home game, not a company-wide decision to be applied to all products we produce.
