The gist of my conundrum is the interaction of extra evolutions listed in each subtypes base form(Such as Azata eidolon's with the serpentine base form gaining Limbs[Arms], Tail, and Tail Slap or Psychopomp serpentine base form gaining Bite, Pull[Bite], Reach[Bite], Tail and Tail Slap) with the base form stat block, particularly the listed attacks (Bite [1d6] and Tail Slap[1d6] for serpentine base form)
Possible resolutions:
A) The evolutions stack, so Azata would have a bite [1d6] plus strength and the Psychopomp's Bite[1d6] would add Str x1.5 due to already having the bite from the base form then gaining the bite evolution
-OR-
B) The stat block's Attacks are either leftovers from the Chained summoner or just typical things that are overwriten by the listed evolutions according to the subtypes base form.
Any help and clarification would be greatly appreciated.

They are typical things that get overwritten, yeah, so B.
