I will be playing in this AP in a bit and I am playing with char ideas. Are most encounters, or at least the major ones, in environments to cramped for spells such as enlarge person and giant shape?

Some basic questions:
How many other players will there be? The more of them there are, the more you're competing with them for space.
What do you consider "too cramped"? I don't believe there are that many 5' corridors, and when they are, I don't think you're expected to fight in them.
Are you expecting to go Huge? Ceilings might get a bit cramped at that point.
In general, though, I don't think it'll be a problem unless there are other concerns (a charge-centric build might not be wise, for example).
It shouldn't be a problem. There are many encounters outside in the desert, and most of the major opponents are inside large rooms with very high ceilings.
