The real question is can a flyer with a "Good" maneuverability use Spring Attack?
I believe the answer is yes (see Fly Skill).
Assuming a spring attack of 15' in, turn 180 degrees, move 15' out (40' total of movement), you get a DC 20 Fly check - Turn 180 degrees by spending 10' of movement DC 20. Good maneuverability gives a +4 on the roll. A 5' x 5' carpet takes no size penalty, but a larger one gets a -2 penalty.
Oddly, one way to defeat this tactic is to cast "Silence" since the carpet is directed by voice commands!

You can use spring attack while on a mount? No, you need a specific feat, Ride-By Attack. Same thing for the carpet, you are riding it, no moving.
Spring Attack (Combat)
You can deftly move up to a foe, strike, and withdraw before he can react.
Prerequisites: Dex 13, Dodge, Mobility, base attack bonus +4.
Benefit: As a full-round action, you can move up to your speed and make a single melee attack without provoking any attacks of opportunity from the target of your attack. You can move both before and after the attack, but you must move at least 10 feet before the attack and the total distance that you move cannot be greater than your speed. You cannot use this ability to attack a foe that is adjacent to you at the start of your turn.
Normal: You cannot move before and after an attack.
As written, if you have a flying speed you can use it, but the carpet don't give you a flying speed, it give you a vehicle.
And you don't have any need to "turn around" to use Spring attack while flying, you can move on a square on the left or right of the target, attack, and continue your movement in a straight line.

Now that you point it out, I agree with you that you cannot spring attack on a carpet because it does not give you a fly speed (ie it is essentially a vehicle or mount).
And you don't have any need to "turn around" to use Spring attack while flying, you can move on a square on the left or right of the target, attack, and continue your movement in a straight line.
I don't quite understand this comment. I never said you had to turn around when spring attacking. I gave an example of a spring attack, and chose the most extreme in terms of flying... in, turn around, then out, and showed that a flyer could do it. You are correct that there are less extreme examples that work also.
