What recommendations would you all offer when it comes to refluffing, altering requirements, gaining feats, class building, and changing deities?

If the requirements can be worked out favorably for the idea I was actually considering the Enlightened Paladin archetype for this build... though given the synergy the PrC already allows for a Paladin/Monk muticlass would perhaps be the less favorable choice: http://www.d20pfsrd.com/classes/core-classes/paladin/archetypes/paizo---pal adin-archetypes/enlightened-paladin-paladin-archetype

Monks of the Sun Soul Order believe that they each harbor a small fragment of the Great Light's divine essence, long absent from the lands. Brothers and sisters of the Order of the Sun Soul are trained to tap into the "spiritual light" within -- a tradition that developed early in history -- and manifest it externally. The monks are loosely affiliated with the faiths of Sarenrae, Desna, and Shelyn, and they share many common concerns with those churches. Staunch opponents of darkness, evil, and chaos, the Sun Soul monks serve as crusaders against churches of evil deities, defenders of the common folk, and protectors of sites sacred to deities of light and good.
Becoming a Sun Soul Monk
Monk and monk/paladins make the best Sun Soul monks. They are uniquely suited to the asceticism and discipline of the order. Clerics,fighters, paladins, rogues, and multiclass combinations thereof occasionally join the order, but their total collective numbers are small.
As with any combat-oriented character, you will find that a high Strength, Constitution, and Dexterity will serve you well. You will also want a high Wisdom to maximize the use of your "inner fire"combat abilities.
ENTRY REQUIREMENTS
Alignment:Lawful good or lawful neutral.
Base Save Bonuses: Will+4.
Skills: Acrobatics 4 ranks, Knowledge (arcana) 4 ranks,Knowledge (religion) 4 ranks.
Languages: Celestial,Draconic
Feats: Athletic, Improved Unarmed Strike, Stunning Fist.
Patron Deity: Sarenrae, Desna, or Shelyn .
Special: Member of the Order of the Sun Soul.
Class Features
All of the following are class features of the Sun Soul monk prestige class.
Weapon and Armor Proficiency: Sun Soul monks are proficient with all simple weapons, but gain no new proficiency with any armor. You can treat a light mace as a special monk weapon for the purpose of your flurry of blows ability.
Monk Abilities: Sun Soul monk levels stack with monk levels for purposes of determining flurry of blows, unarmed damage, AC bonus,unarmored speed bonus and ki pool.
Sun Soul (Sp): You gain the ability to radiate magical light,equivalent in effect to a daylight spell by paying one ki point for the duration of 10 min./lvl. You and your clothing are the"object" from which the light emanates. Your caster level is equal to your combined monk, paladin, and Sun Soul monk levels.
Low-Light Vision (Ex): At 2nd level, you gain low-light vision if you don't already have it. If you already have low-light vision it increases tox3 instead of x2.
Sun Soul Ray (Sp): At 2nd level, you gain the ability to radiate and project a blast of light from an open palm, equivalent in effect to asearing light spell. Treat the caster level as equivalent to your combined monk, paladin, and Sun Soul monk levels. This ability costs 2 ki points to use.
Flaming Fists (Su): At 3rd level and beyond, you can channel your inner light into your unarmed attacks as a swift action, giving them the flaming weapon special ability for a number of rounds equal to your Wisdom bonus (minimum 1) for 1 ki point. For 2 ki points you can bestow the flaming burst weapon special ability on your unarmed attacks. While for 3 ki points you may brilliant energy weapon special ability on your unarmed attacks.
Abundant Step (Su): At 5th level or higher, you can slip magically between spaces, as if using the spell dimension door. Using this ability is a move action that consumes 2 points from his ki pool. His caster level for this effect is one-half his combined monk and Sun Soul monk levels (rounded down). He cannot take other creatures with him when he uses this ability.
Greater Sun Soul (Sp): At 7th level, you gain the ability to wreathe yourself in flames, equivalent in effect to a fire shield spell(warm version) for 4 ki points as an immediate action. Treat your caster level as equivalent to your combined monk, paladin, and Sun Soul monk levels.
Eyes of Light (Ex): At 8th level, you can see perfectly in darkness of any kind, even that created by a deeper darkness spell. In addition,you gain immunity to being dazzled, and immunity to light-based blindness effects
Sun Soulbeam (Sp): At 10th level, you gain the ability to emit dazzling beams of light, equivalent in effect to a sunbeam spell at the cost of 4 ki points. Treat your caster level as equivalent to your combined monk, paladin, and Sun Soul monk levels.
Tongue of the Sun and Moon (Ex): At 10th level, you can speak with any living creature.

EX-SUN SOUL MONKS
A Sun Soul monk who becomes non-lawful cannot gain new levels as a Sun Soul monk, but retains all Sun Soul monk abilities. Like a member of any other class, a Sun Soul monk can be a multiclass character, but multiclass Sun Soul monks face a special restriction. A Sun Soul monk can gain levels in one other class (other than monk) and still progress as a monk or as a Sun Soul monk, as long as long as his combined monk and Sun Soul monk levels exceed all other class levels.
You are a dedicated servant of the common man, eschewing ostentatious consumptions of wealth, food, or libation. You almost never despair,no matter how dark things seem, for you have discovered your spiritual light within. You see yourself as a custodian of the Great Light's divinity and the inheritor of an ancient tradition, awaiting the day it returns to its proper glory and banishes the spiritual shadow from the world.
COMBAT
You relish unarmed combat, particularly against foes vulnerable to fire,for in such battles you can truly unleash your inner fire. Thanks to your training, you can also use spell-like abilities that burn your enemies, a potent combination unexpected by most foes.
ADVANCEMENT
Qualifying for the Sun Soul monk class requires a significant commitment of skill points. As you gain levels, you probably want to catch up in some of the more physical skills, including Acrobatics, Climb, and Swim. Moreover, you might find you have missed out on some combat feats as well. The order is known for its employment of the Sun School[CW] tactical feat; it is suggested that you acquire it as soon as you qualify.
If you want to multiclass as you advance, consider taking levels in monk or paladin. Many of your abilities stack with levels in these classes, so doing so maximizes your potential.

I've always thought that Sky Soul would have been a better name for that order, otherwise the relevant sun deity seems to have too much influence.
As for the conversion itself, I'll take a look at it later, which - due to my schedule - will probably be much later, unfortunately ... :(
You make a fair point, though I consider the PrC lore related to light, so Sky Soul perhaps is not the best choice as well.
I would probably suggest Radiant Soul Monk
A thought ... seeing as the relevant moon deity in both cases (FR and Golarion) is CG, how about opening the pre-requisites so that a Martial Artist (Monk archetype which does not have to be Lawful X) could qualify for and enjoy the benefits of this prestige class?
That is a fair consideration, though I would say there needs to change the fluff a bit and prehaps gently alter the focus slightly... any thoughts on how to do so?

Radiant Soul works for me. As an aside, Sky Soul was only suggested because both the sun and moon are in the sky, and "Heavenly Orbs of Light Soul" didn't really off the tongue. :)
As for re-flavouring due to alignment/portfolio issues ...
Allow entry for LG, NG, CG, and _possibly_ N and CN. That will allow both regular LG Monks and NG and CG ones with the Martial Artist archetype. Maybe ditch the LN possibility (at least in Golarion). Unlike NG Lathander (who came with LN Amaunator's baggage), Sarenrae seems to have been NG from the beginning. The "one step away" alignment rule for the deities concerned (NG, NG, and CG) would give you: LG, NG, CG, and optionally N and CN.
... To be honest, I do wonder what Shelyn (or Sune in FR) is doing with this order at all. Sarenrae and Desna against darkness and evil works alright (but not against chaos, as Desna - as was Selune in FR - is CG). In my homebrew version of FR back in 3.5, I dropped Sune as a patron deity for this order/prestige class and opened it up for Battledancers (an old 1e Dragon magazine article on chaotic "Monks" which was updated to 3.5 during Paizo's time with Dragon).
How about a choice at the first level of the prestige class between focusing on fire energy/damage and cold energy/damage? It doesn't even necessarily have to be a sun worshipper = fire and moon worshipper = cold divide, as it could be an option either to focus further on one's own religion's favoured energy or to diversify in the name of ecumenical cooperation.
As for a straight-forward critique of the class abilities ("are they over-powered, okay, or under-powered?"), I'm not the best at that. Furthermore, I've just used up my free time and have to prepare for running a game on the weekend, so I probably won't be able to comment much more until sometime next week ...

Soul Soul Monk? I could have sworn I had the title be Sun Soul Monk, how the heck did that happen? Sighs, I wonder if there is a way to fix that.

I will consider what you have suggestion and see about adding it in, I admit finding a replacement for Sune with Shelyn was not the best fit but I liked the dynamic of three deities each being respected by the same group. Onto why, I would say ti is because the Order was not just about the light of the sun and moon but of the heart/soul. That and there was fair consideration of the creative arts through Lathander and Sune.
I admit I also liked the who LG, NG, and CG consideration allowing the Order to be for good in all its paths.
On the damage possibly offering fire or cold damage... maybe.
