i'm thinking about a variation of the infernal binder of chaotic or neutral alignment (instead of lawful or neutral), who binds demons (instead of devils), and who gets a quasit (instead of an imp) familiar.
would this work?

I don't see why not, as long as you explained the difference in the binder's relationship with what they summon (it wouldn't be an indentured servant-and-master relationship, since Chaotic beings of any sort obviously won't cotton to such things, but more of a maleficent friendship: "Heya pal, I feel like going on a debauched killing spree - wanna come up here and join me?"), and probably some mechanical differences that reflect that.
