Say a character is standing on a 5'x15' table, shooting a bow. Another character, who is under the table, attempts to turn over the table. What would you as a DM require for the checks and results of the activity? I'd estimate the table weighs 200 and the character (on top of the table) also weighs 200.

I'd say the person trying to turn the table over checks his carrying capacity. If he can lift 400lbs he can turn over the table as a full-action, counting as a trip-attack against the guy on the table, that does not provoke an attack of opportunity. I'd probably also give him a +2 bonus on the check, since he's basically taking away the ground the bow-toting dude is standing on.
If the bow-wielder gets tripped he falls prone in his square, where there is now floor, rather than table, and if the trip attempt fails, he manages to keep his balance and lands nimbly on the floor(possibly doing a cool backflip as the table goes flying, beneath him :] ).

I wouldn't make it opposed, because basically, no matter how dextrous the archer is, he's not going to be able to prevent the table from being flipped (whether he falls is a different question).
I'd say, make it a straight up strength check to flip the table (DC 15 maybe?). And then have the archer make an acrobatics check (maybe DC 20?) in which failure means knocked prone, success means jumping to an adjacent square.
