I rather like this staff of the monkey king from the forbidden kingdom [url]http://www.martialartsactionmovies.com/wp-content/uploads/2013/01/Jason.jpg [/url] however most metals in special materials specifically states a quarterstaff can't be made out of them. From the colour I was thinking Elysium bronze but I wanted to know if there was a valid reason you couldn't/shouldn't do this first?
Please don't say talk to the Gm I'm not asking is this allowed in a given world but would making a quarterstaff out of metal specifically Elysium bronze break something I'm missing.

I don't know if you've ever swung around a 6 foot steel bar or not, but trust me that they are rather unwieldy. It's easier to swing a maul. This has always been enough justification for me to not allow metal quarterstaves in my games. You really need a lighter weight metal, such as aluminum, for a durable weapon that is balanced for use as a staff. Mithril may be light enough for your purposes.
If you really want such a weapon, I suggest making it a martial weapon as it would require more martial prowess to wield something that heavy. There is no reason it can't be made of metal, but you would be prone to swing it too hard and unbalance yourself until you trained with it properly.
My group tends to go with metal caps for staves. They add very little weight and increase the durability of the area used to make most strikes.
To answer your question; no it won't break the rules.

Oh I know from personal experience how heavy a metal bar that length is (we use them at work). However from a flavour standpoint I like it and this is a world of giant fire breathing reptiles so I can see it working there. I was wondering more would a metal quarterstaff be mechanically unbalanced more than if it would be physically unbalanced.

You may want an Undine weaponshaft.
PS.: as for the realism, while unwidely if you hold them at the end, I find metal bars a lot better balanced than, say, axes as long as you hold them more to the middle.

Quite possibly it did sound hollowish when they used it in the film.

Using Elysium Bronze as sheathing for a quarterstaff will giver the user crotch-rot and cause vermin to attack them on sight.
This is a rule.
