Since Flesh to Stone can technically be undone, the subject is Not dead, and only Appears dead when *viewed* with spells, I'd argue that scrying on the individual would still work.
For all intents and purposes, though, the mage scrying will probably have a hell of a time trying to figure out why the scrying spell keeps going back to this statue. Maybe they'll judge that some strange effect shunted all forms of divination back to that thing, and destroy it.
...Then the spell will fail.

The creature is not dead, but it does not seem to be alive either when viewed with spells such as deathwatch.
If you are the player, ask your GM if you can use a Knowledge Arcana to discern how the scry spell might interact with the petrified target. Your Gm's reply could be different then what is given in this thread.
As a GM, I do not see why a scry spell would not work on a petrified creature. However, I can see that the attempt to scry may be more difficult since the target is now petrified. I would give the Will save of the target a +5 bonus against the scry attempt since the spellcaster's knowledge of the target is no longer the same. I would also describe to the player who controls the caster that somehow the scry is more difficult than he had expected (which means something has changed).

I'm the GM in the situation and as unfortunate as it is, is happened during a game ending TPK. I'm actually wondering for the post game write up I have to do.
