What I don't unerstand is that the wolf starts as medium, therefore can be riden right away, and seems on all points more powerful than the dog.
So why would anyone choose the dog instead of the wolf? I wanted the dog for my character concept, but it seems I'm better off choosing the wolf if I want to ride from level 1...

On the other hand you can simply skin your wolf as a dog and no one will ever know. No reason to go for an sub-optimal choice just because of a label.

Greetings, fellow travellers.
It's not been touched directly here (yet), but just as reminder - there are a myriad of threads about it already - that mechanically AC =/= animals.
For AC you take the stats given in CRB and that's it.
So while it says "dog" under the AC entry in the druid section, what you call it has no consequences on the mechanics.
The book on ACs can be found here.
