In a game I have planned, I'm going to have the badguy cast dominate monster on the character's mount. I figured there would be some rules for a suddenly hostile mount but couldn't find any.
What would the ride check be? I see no rules on "bucking" to get a rider off, or details if the mount suddenly wants to bite you.
Any directions as to where I can look?

No, as far as I know, there are no rules about adjudicating staying in the saddle if your mount becomes suddenly hostile.
Short of someone coming in to correct me about that, I would suggest improvising; perhaps an opposed roll between the mount's CMB roll and the rider's Ride check, if the mount is trying to dislodge the rider?
What do you intend the mount to do if dominated, though? Depending on the course of action, you might need to come up with your own means of adjudicating it, or you might not.

I humbly suggest that the very best action for a dominated mount is probably, "Move at top speed away from the battlefield". 'Top Speed' is probably a 4x move run.
The PC riding the dominated mount must jump off, else be quickly carried too far from the battlefield to contribute. This helps the villain set up a 'defeat in detail' situation.
An important consideration is the initiative order. Pets usually go on the same init as the PC. That won't happen here, which will tell the PC something is amiss. Perhaps let the PC go first & make clear that the mount is not behaving. The PC will be fine if they choose to GET OFF THE MOUNT right away. Otherwise, on the mount's turn, the PC will be carried far from the battlefield.
