I was wondering if it is posable for a halfling cavalier to take a roc, or dire bat as a mount. With 1 rank in druid or ranger i can take them as an animal companion. So what is stopping me from riding a roc at lvl 1? Also how would the cavalier and druid lvls stack in regard to the animal companion?
I wonna make sure this is legal for PFS, and if not, how could it work. Would i need to take beast rider and wait till lvl 4 (when i get more exoctic mounts)

Class levels only stack is the animal companion is on both lists. If there is a limited list of animal companions available for a class those are the only companions they can advance. Even the beast rider doesn't get access to any flying mounts.
If you want your cavalier levels to count towards a flying mount, the only option I know of would be the Monstrous Mount feat from Inner Sea Combat. You won't be able to ride them while flying until level 7, though.

If you want a cavalier with a flying mount, you need to get Inner Sea Combat which has a feat known as Monstrous Mount, which allows you to get a hippogriff.
Levels in multiple animal companion classes only stack if the animal is allowed by both classes, and the beastrider says this:
A beast rider cannot choose a mount that is not capable of bearing his weight, that has fewer than four legs, or that has a fly speed (although the GM may allow mounts with a swim speed in certain environments).
