As a monk, can I use bonus from jumping to acrobatics for going through threatened square? (rolling or something like that) or add this bonus to jump over an enemy?
No, it's just for jumping. You can attempt to jump over an enemy, BUT unless you clear them by enough to stay out of their reach, they'll get an opportunity attack against you because you're moving through their threatened area.
