There are three possible boon sheets that a GM can choose from when they have achieved any GM stars.
For the first star, I believe I can only pick one of these sheets and assign it (after paying the cost) to a single character.
For the second star, can I pick a different sheet and assign it to the same character or different character (or pick the same sheet and assign that star's boon to another character)? Or, do I have to keep using the boons I selected for only the character I had already assigned a sheet to?
And at 200+ tables, other sheets can be chosen for different characters (but let's not go there yet!).

So, that means, when the 2nd star is hit, you pay for the next boon and apply that to the same character, correct?
I guess you better really, really like that one character you chose to apply the sheet to or wait until you GM'd hundreds of games!
Also, as an example, if a GM doesn't reach 2 stars until the character that he assigned the boon to has made it already to level 5, he can still use the 2-star boon (even though the earliest he could have done it is when the character hit level 3)?
Oh, one more thing...
Why would anyone spend 1PP when you can just forgo a single Day Job roll?
You only choose one sheet to apply to one character.

Oh, bummer, I thought it would mean that it would be a real easy decision to forgo the Day Job roll when you don't have one! Ah, I guess you'd be forced down the 1PP route in that case. Thanks.

It was clarified by John Compton that you don't need a day job to choose the "forgo a day job roll" option.
On phone so can't link to it.

There's nothing that says they have to be the exact level to get the boon. They're just prerequisites. So they have to be at least a certain level and have certain number of stars in order to get a boon.
I knew which character I'd apply mine to, but now I have to choose who to apply my second sheet to, since I just hit 200 tables... :)

So, that means you can retroactively apply the boons to the one character even though they passed the level up? I think that makes sense.
In theory, that means if you hit 5 stars and never used one of the sheets, you can apply every single boon retroactively to a 9th level character.

Awesome. If you get that link, please post it here. I'm sure there would be someone to dispute that in the future otherwise.
