If I draw 2 cards, for example, to reset my hand and I get a Blessing, can I play that card and get another encounter phase? Can I then reset my hand again, get another Blessing and keep going?
Reading the rules, it says basically "you can play anything at anytime unless the card says otherwise." My group has taken to doing this recently and I'm trying to figure out if it's correct.

No, because the Reset phase of your turn comes after the Explore phase of your turn. You can, however, use those blessings to assist other players on rolls during their turns.
To clarify, I can wait until the next player goes and then use those Blessings to let THAT character have multiple encounters. For some reason, we've only been using Blessings to augment attacks/checks, etc. We've never thought to use a Blessing to help them get another encounter.

No. You can only play a blessing for you to explore, not someone else. The cards speak to the character playing them. "Discard this card to explore your location" means the person discarding it does the exploring. And you can only explore on your own turn.
You may never explore on another player’s turn.
"Discard this card to add 1 die to a check" means the person discarding it is adding a die. Notice they aren't mentioned as being the one attempting the check.
Let the cards speak to the person playing them.

You cannot explore for someone else; nor can you ever succeed at a check, defeat a bane, evade an encounter, or acquire a boon for someone else. You can never resolve anyone else's encounter, you can only help them to resolve it.
You will notice that the pertinent wording on blessings is "Discard this card to explore YOUR location". When a card refers to "you", it must be YOU benefiting from the power. Even if you are at the same location as someone else, and your location at the time also happens to be their location, you still cannot explore for them.
