Some mount / cart questions

Rules Questions

I've read through the PFSRD entries, looked through past discussions here, and generally scoured about to find little information on this topic.

This is the roundup of my planned character for an upcoming campaign: a halfling ranger with a wolf mount and an attached cart. Her backstory is that she hauls her leather and meat in to market with the cart, and in while in town she gets pulled into adventure. I would like to keep the cart if possible, and I've taken some liberties by scaling the horse cart down. I've given it a weight of 50 (1/4th of original 200) and a capacity of 75 lbs. I THINK I should still be able to ride the wolf, as this would be within his hauling capabilities. (I'm not completely sure on this)

For reference and great lulz, this is an example of the closest thing to what I'm going for, just scaled up slightly.

My other question pertains to unhitching time, a topic which I have never seen mentioned. Of course, I'd leave the cart behind for dungeon crawls, but our campaign setting has a lot of wide open road, that the cart could help us traverse more quickly. I'd like to know how quickly I should be able to unhitch the cart if we happen to be waylaid. There is no reference to unhitching that I could find anywhere. I don't think it should take more than a round or two to unhitch, especially while mounted with the hitches at my sides. My husband differs; he thinks it should take several MINUTES.

Am I totally off my rocker? Did I just miss something somewhere?
