"Do Archetypes that replace the first rank of a class feature remove all availability of that feature?"
"If I have an ability that replaces the first rank of a class feature, but no other ranks of that class feature, would I then get the first rank of that class feature when I would normally get the second rank of said class feature?"
"Do 2 class features that increase certain statistics in the same manner stack?"
I create this FAQ thread in reference to the discussion I've been having here.
It has been argued that there are archetypes that replace the first rank of one class feature and make no other motion to replace the other ranks in the same class feature. This has lead to players theorizing that fighters receive an untyped +7 (or +6) bonus to their Attack and Damage rolls with specific weapons at level 13, when the Base Class can manage possibly half that amount. I'd like to think that it is munchkining or gaming the system, but I'll keep such concepts out of the discussion.
It doesn't change the fact, however, that this is only possible with the assumption that you can receive several sorts of "weapon training" ranks later down the road. But is this really the case? Can, say, a Tactician Fighter, who does not receive the first rank of Weapon Training, automatically then receive 2 ranks of Weapon Training once they hit 9th level? Or is it that they receive the first rank of that weapon training once they hit the level where they would normally get a second rank?
Although it seems cut and dry, some parts of it don't make sense, or aren't compatible with what the book has written in comparison to the question being asked
Relevant RAW with fairly relevant text below.
If an archetype replaces a class feature that is part of a series of improvements or additions to a base ability (such as a fighter's weapon training or a ranger's favored enemy), the next time the character would gain that ability, it counts as the lower-level ability that was replaced by the archetype. In effect, all abilities in that series are delayed until the next time the class improves that ability. For example, if an archetype replaces a rogue's +2d6 sneak attack bonus at 3rd level, when she reaches 5th level and gains a sneak attack bonus, her sneak attack doesn't jump from +1d6 to +3d6—it improves to +2d6, just as if she had finally gained the increase at 3rd level. This adjustment continues for every level at which her sneak attack would improve, until at 19th level she has +9d6 instead of the +10d6 of a standard rogue.

you should check the weapon training FAQ... i seem to recall there was a ruling (possibly fairly recently) that archetype abilities that function as a standard class ability but force you to choose from narrower options (or offer no choice) count as the standard ability even if they're not so named (meaning that even if you did get both abilities they wouldn't stack, despite being untyped, because they're from the same source)... it might have been under something else (archetypes, or something) but, if i remember correctly, weapon training was the specific example that it used...
edit: if i did this right, this should link directly to it... as for the other part of your question (...receive 2 ranks of Weapon Training once they hit 9th level?), you already have the answer in the text you quoted (that answer is clearly No)
