I am not sure I agree and I wanted to add a bit of opinion. Both archetypes do something with spells so I understand the OPs question about whether they could mix.
The weird thing about Oaths is that it is explicitly stated that you can have more than one, and they all modify spells. They also say in one paragraph that they add spells to your spell list, and then in the next they say that you get a slot like a cleric domain to prepare one of your oath spells.
The implication is that Oaths go outside of the normal rules for mixing archetypes since any combination of oaths will modify your spell-casting class feature.
So if we accept that and then look back at the OPs combination. Oath Against Undead and Warrior of the Holy Light both modify your spell-casting class feature. More specifically, one expands your spell-casting, and the other eliminates it. Does that make sense? That's why there are rules about not changing the same class feature because it leads to weird situations like this.
I would say that you can't mix Sacred Servant with an Oath for the same reason.

A character can take more than one archetype and garner additional alternate class features, but none of the alternate class features can replace or alter the same class feature from the core class as another alternate class feature.

So since both abilities alter it, you cannot take it. No room for interpretation here that I can see :-)
You can always houserule it, of course.

Adding spells to your spell list is not the same as altering your spells class feature. Oaths and Holy Light stack, unless the oath alters Aura of Faith.
You make the assumption that either your spells list is exempted from the change/replace rule, or that it is somehow different from the spell-casting class feature. I could argue against this on its own, but I think it's even easier to argue about the second half of what Oaths do related to spell-casting: they give you more spells.
So if an Oath (in addition to adding more spells to your spell list) gives you the ability to cast more spells through the addition of a pseudo domain slot, and Warrior of the Holy Light lets you cast fewer spells by eliminating your spell-casting, how can you say that they don't both affect your spell-casting class feature?
