So I have the bestiary 3, and I'm wondering what I need to do to determine stats and abilities for a playable tanuki. Stat bonuses, skills, etc. The sake thing is also a concern
Whats the things CR, does it have HD? If its has racial HD it is prob a no go for player race.

CR4, 5HD
CR 4 would make it a 4th level pc. I have no clue how pathfinder does stat conversion off hand. might want to look at its type for skills. See how many it gets a HD+ Int and add em up. Good chance it only has "class" skills. Monster creation chapter might be of some help to you.
