I have currently have a Chimera for a mount and from what I gathered from the Core Rulebook is that if I have her use 1 move action to move say 30ft then she cannot do anything else?

What I was trying to do was cast a spell direct the Chimera to move then use its breath weapon, which I'll admit seems rather broken.

Also, being as how a Chimera is wider than a horse, is there any problem using a melee attack or touch spell while mounted?

There is nothing I find in the CRB that indicates that your mount cannot do anything but move. It should be able to move 30' (move action) and use it's breath weapon (standard action).

CRB p202 states that while mounted you share the mount's space during combat. This means that you are effectively in all 4 squares and can reach any of the squares around your mount. So no, no problem using a melee attack or touch spell while mounted. :)

NP, I should of course clarify that for your mount to make an attack at the same time you make an attack you need to succeed on a ride check. But, if you have a Chimera mount, you should be high enough level to auto-succeed such a check.
