A character is turned into an undead (intelligent and free willed if it matters) and becomes evil. Will he become good again if the undead is destroyed and he is raised?

If he automatically became evil, it was not of his free will. And once that condition that forced him to be evil is removed, he should return to his original alignment again.

Agreed with Yora, but you can also have a Cleric cast Atonement on him (the non-costing version) to restore his powers if he was a Cleric, Paladin or Druid who was forced to break their oaths due to their undead state.

Thanks for the answers.

And now I got an idea for a Vampire Druid who still respects nature even though it rejects him...

Go watch Buffy/Angel for how a once evil undead might deal w/ gaining the option of not being forced to be evil any longer. :)
