You have to have a deity, and you have to choose the domains associated with that deity. Not a fan of it myself. There is a section on religion in your guide to PFS play that outlines the rules for religion. In short, all divine casters(except the oracle) and cavaliers of the order of the star must have a deity and it must be within one step of their alignment.

Not only divine casters, but any feat or trait that is associated with a diety (such as spiked destroyer, gorum) requires that you worship that diety, and be within 1 step of their alignement.
The PFS "head GM" has just ruled that they want people to use the diety system. Probably to avoid people taking some combinations that are only allowed to evil characters and using the "no diety" to skirt around the no-evil alignement restriction for society play.
I can't really find any combos you can't get a diety to grant though, with the demon lords, empyreal lords, elemental lords, and several other optional mythos in print.

The downside of course, is that you may not like the deity you have to follow and you can't be an individual. For instance, before chronicles of righteous I went and looked up all the combinations for animal domain. I had 2 or 3 options outside of being evil, and the 2 or 3 options didn't have much depth or were all about a concept unrelated to the character.
