Is the humming bird supposed to be an animal companion? Is it just a tamed creature he found? Otherwise, there will be homebrewing involved. There are other flying creatures you could pick if you decided to go beast rider though, so it should not be that much of a problem to ask for in a home game.
Stylistically, I do find it nice though. With the power of challenges to shore up any problems with damage, and the fact that ride is DEX based, then a DEX build wouldn't be bad is you chose rapier. Admittedly, you do not need to use dex to use a rapier, so keeping it as a side arm and focusing primarily on the lance could be good too.

Well, there are several animal companions with flight that start off medium sized and move up from there. It takes a level 7 beast rider to get into options that give flight though.
For other balance issues, I can easily see reskinning certain creatures such as the giant wasp could be used as a general basis. You wouldn't have the poison, obviously, but a 60 flight speed is rather appealing.

This thread makes me think of a Hummingbird Roc that sounds like a dual-rotor helecoptor.
I have no idea what this thing would eat.
Do you have access to a bestiary? Look under anything listed as a plant, preferably huge sized. It could actually be interesting to see it get distracted trying to follow such a creature. Alternatively: gallons of water and a couple of huge bags of sugar.
Flying mounts for cavaliers are verboten, even for beast riders.

Well, scratch all this. New question: if you got your animal companion from another class with different rules, would it still stack? As in, if he took a dip into druid, could he accomplish it then? Or would it only be good for the prescribed mounts?If this works out, you can have your general style from the get go, instead of this level 7 business. Sadly, your choice in gear gets restricted a bit to 'natural' armors.

There was some debate about this on the forums a while back. There seems to be text that both says that animal companions stack (although you get the more restrictive list) and that it is possible to have multiple animal companions (though that doesn't help you in your desired build).
Someone with more sage wisdom will have to recall the specifics of that, though.

Well, since this idea is based off of homebrew anyway, I will posit two arguements for why this character should have access to a flying mount.
The first is a feat for orcs and half orcs: beast rider. Yeah, confusing. It also has the level 7 thing. Anyway, this feat gives new options for animal companions and mounts (plus some stuff boosting effective druid level). One of the options is the pteranodon. Thus, a flying mount.
Secondly: Strix. Just Strix. Those buggers get a 60 ft flight speed from the get go. The buggers.
So, in conclusion: Maybe a feat? Or at least over looking any complications in the druid dip idea?

GM was one of my groomsmen in my wedding. I am like his younger brother. So yes trolling GM makes playing the game much more interesting. The group troll eachother with every character.

Hmmm I guess making a hummingbird knight is a no go. Wanted to play one for my friends adventure path. He hates hummingbirds and gnomes. And doesn't like to house rule.
He... he hates hummingbirds? How on earth can you hate hummingbirds?
So you can make this build work fairly well as a Druid. Dimorphodons, Rocs, and Giant Wasps all reskin into hummingbirds pretty well.
