Benefit: While using the Snake Style feat, when an opponent’s attack misses you, you can make an unarmed strike against that opponent as an attack of opportunity. If this attack of opportunity hits, you can spend an immediate action to make another unarmed strike against the same opponent.

Does the attack of opportunity activate off of an attack missed due to the activated Sense Motive check used in place of AC, or does the attack of opportunity activate off of any missed attack while you are in 'Snake Style mode', essentially granting you a potential two attacks for every opponent miss as long as you have AoO's available?

Not quite. You must spend an immediate action to make your 2nd strike, and you're only allowed one immediate action each round.

So upon the first miss, you would get an AoO, plus your potential "extra attack", but upon each subsequent miss (in the same round) you would only get an AoO.
