Say the goal of a character was to use Performing combat, Sword and Pistol, Shatter defenses, and Prianha strike and Weapon Finesse. The goal being high reflex and high AC.
How would you go about building it and what would the min level be required to obtain it.
My own theory goes something like lvl 9 or 10, monk, fighter, gunslinger

From personal experience, don't do it.
Sword and pistol is probably the most feat-intensive investment in the entire game, except maybe sword and board TWF. In the end it's not even worth it your to-hit is awful and your damage is below average at best. Save feats, take 5 levels in pistolero, get the Deft Shootist grit feat, and then go TWF. After that go fighter. I don't know where performing combat and shatter defenses fit in, but that's your job.

It's actually a combo I came up with for our rogue to be able to sneak attack wherever whenever, but I was just considering it as an all in one character idea.
This isn't a PFS table, and we're going to 20. So it was something I'm just kicking around while at work.
The point of this is the rule of cool and trying to be moderately efficient while doing it.
Shatter Defenses is just gravy because you remove their dex modifier basically....

Pistolero 5/ dawnflower dervish 1/ fighter X. That 1 lvl of bard does alot for you. Bump to will. Inspire courage gives you a +2 to hit and damage, dex focused melee attack, and access to all the spells and skills on the list. Personally, I would front load that lvl, but that is me. All you really need is a cha of 11 to get the most of it.
