The text in additional resources says if I bring a print out it can't be text copied into word and printed. And they mention printing out a page from a water marked PDF but I don't have any PDFs. So if I want to play this paladin I've been working on I need to bring The Core Book, Advanced Race Guide, Blood of Fiends, Ultimate Magic and Ultimate Combat. All physical copies for like one or two pages each.
I can't do that. Not only is it just cumbersome but I have a bad back and physicaly can't carry that much weight around.

There's a thread HERE where Mike Brock specifically mentions photocopies as being OK.
It's to ensure that the GM has a copy of the rules (as published by Paizo) to refer to for any esoteric options that players use, not so GMs can be copyright police.

This should probably be in the PFS forum but it sounds like you may be out of luck unfortunately. Maybe ask around the gaming group to see if anyone has the PDFs you need and would be willing to print them out for you? I believe the restriction on 'watermarked' is to make sure it was a purchased PDF and not illegally obtained, not that you personally own it. I cannot imagine the GM rejecting the papers if they come from one of the other players, but I honestly don't know how strict they are about it.

Print outs from the PRD or SRD(in fact, the SRD is not a good source to be qouting rules from in general) aren't legal rule sources for PFS. In PFS, you aren't supposed to use PDF's with other peoples watermark, unless that person is playing at the table with you. If you own the book, it's okay to make photo copies, but not of other peoples books.
These rules are pretty hard to enforce, but PFS works mainly on the honor system, so don't be a jerk.

I thought all of Paizo's content was OGL? Isn't it all up on d20pfsrd and Paizo's own PRD? If so, I'd think you could just print out the relevant pages from either of those sources. Or does PFS have some very explicit language that prohibits this?
Not all Paizo's content is OGL, setting based content is specifically NOT OGL and won't be on the site. although I do believe the specific content listed is there.
As I'm a subscriber I have the PDF's as an included extra and have all the ones I need loaded into my iPhone.

The PRD is great for those GM of PFS who don't have access to all the books (indeed I needed it to run Magus NPCs and for a few monsters from Bestiary 2, without it there are a number of scenarios I couldn't have run).
However for players, the requirement for the actual book or PDF printout I assume is to prevent someone copying the text from the PRD and subtly changing it to provide their PC with extra advantage (i.e. be a cheat). I guess it also promotes sales for Paizo as well :)

The situation Mike commented on still had a hard copy in the room. I would be leaving my hard copy at home.
How about this one. Mike Brock posts to second a comment from one of his Venture-Captains containing the line:
Physical copies, and copies of those copies are 100% legal.
