Am I correct in assuming that the listed HP for summons is the actual health of summons? I seem to recall my GM telling me they had 1 HP and that does not sound right.

you use the HP listed in the stat block for each creature.

You're exactly right. I think your GM might be thinking of 4E, where all summons had 1 hp and used the casters defenses as their baseline...
