If I were to summon a shadow demon through greater shadow conjuration, how would it's telekinesis spell-like ability function?
GSC says that objects automatically pass their saves, but non-magical items don't even GET saves against spells like telekinesis in the first place.
Also, if said shadow demon were to hurl a 250 lb. boulder at someone, would they really only take 60% of 10d6 damage? I mean, how is that any different than throwing a 250 lb. boulder with normal telekinesis? It's still a big flying rock!
I'm curious to know how these spells and effects were meant to interact.
Also, does a summoned creature brought forth via greater shadow conjuration still only have 1/5 of its normal HP and AC bonuses (rather than 3/5)?

Objects automatically save vs. the Great Shadow Conjuration, not any spell-like abilities. For example, if I used Shadow Conjuration to Grease an object, the object would auto-save.
I don't think that the spells of a conjured creature are affected by the shadow conjuration penalties, for the very reason you describe. Your shadow conjuration might not be real, but it's rock is.
As for the health and AC bonus, as written it seems to be the case that they are 1/5th.
