Is there a feat or Archetype that would let you take an advanced critter as your Animal Companion/Bonded Mount?
My Paladin has either tamed or befriended some pretty awesome creatures that would make great mounts...
an Alpha Winter Wolf (Size giant) and a Bulette.
Was thinking to have him hunt down and tame a winged creature in the near future to give him flight capability.
But then my bonded mount just sits there at the castle looking pretty I guess?

Sir, you are super in luck. In Pathfinder Campaign Setting: Paths of Prestige, there is a prestige class called the Mammoth Rider who does just that... he gets a Huge-sized animal companion. It's not up on our d20pfsrd.com quite yet, but expect to see it there in the next week or so. For now, I highly recommend buying the Paths of Prestige book, it's one of the best books to come from Paizo in a while.
